Raw prosciutto can also be used in delicious recipes for finger food, first courses and main courses. That’s why we thought of Le Ricette di Faleria, where we propose the recipes we love the most, telling you how to prepare them and what type of prosciutto to use.

Today we start with baked rolls with prosciutto, asparagus and cheese. These are an easy and quick dish to prepare that can be a hot appetizer or a main course. You can use green, white or purple asparagus, or wild asparagus collected during a walk in the open air. Asparagus have a soft and delicate taste, are low in calories and rich in beneficial nutrients such as vitamins B and C, carotenoids, folic acid and minerals such as calcium, phosphorus and potassium. The same can be said of prosciutto, a healthy and genuine food, rich in protein with essential amino acids.

To prepare these rolls we recommend using a sweet prosciutto, such as Parma DOP Faleria.

INGREDIENTS

– 500g asparagus (white, green or purple)
– 8 slices of Parma prosciutto DOP Faleria
– 8 slices of semi-hard cow’s milk cheese (such as Galbanino)
– grated pecorino cheese

TIME: 30 minutes

PREPARATION

Carefully wash the asparagus under running water, removing the white and hard part of the stem. Using a potato peeler, remove the outside, taking care not to touch the tips. Tie with string and boil upside down in salted water for 5 minutes. If you prefer steaming, steam for 10-15 minutes depending on the hardness and thickness. When cooked, drain gently and let them cool.

While waiting for the asparagus to cook, place the prosciutto slices on the worktop, degrease them and spread a thin slice of cheese on top.

Divide the asparagus into similar sized bunches and place across the slices of prosciutto so the tips and stems extend equally on both sides. Roll up the prosciutto, place on a baking sheet and sprinkle with grated pecorino cheese.

Bake at 180° for 5-8 minutes, until the cheese begins to melt, then remove.

Place the rolls on a serving plate and serve hot.
