These are an easy and quick dish to prepare that can be a hot appetizer or a main course. You can use green, white or purple asparagus, or wild asparagus collected during a walk in the open air. Asparagus have a soft and delicate taste, are low in calories and rich in beneficial nutrients such as vitamins B and C, carotenoids, folic acid and minerals such as calcium, phosphorus and potassium. Using a potato peeler, remove the outside, taking care not to touch the tips. Tie with string and boil upside down in salted water for 5 minutes. If you prefer steaming, steam for 10-15 minutes depending on the hardness and thickness. When cooked, drain gently and let them cool.<\/p>\n<p>While waiting for the asparagus to cook, place the prosciutto slices on the worktop, degrease them and spread a thin slice of cheese on top.<\/p>\n<p>Divide the asparagus into similar sized bunches and place across the slices of prosciutto so the tips and stems extend equally on both sides.
